Chardonnay Alto Adige DOC 2023 is produced in the Steinhaus estate located almost 600 meters above sea level, in a position dominating the Adige valley. The property is thus made up of 7 hectares of vines. The climate of Bucholz di Salorno is characterized by strong temperature fluctuations. Indeed, the hot days are influenced by the Mediterranean climate but also the cold nights with very cool winds coming from the mountains.
Winemaking
After careful manual harvesting, the grapes undergo two different types of vinification: some are gently pressed whole; this is followed by vinification with low temperature fermentation partly in steel and partly in previously used wood (about 33% of the grapes). The rest of the grapes undergo a short period of maceration on skins in the press, lasting overnight, followed by fermentation in steel. All the batches are kept separate and left on the fine lees until August in the year following the harvest, with constant bâtonnage. The wine then ages in the bottle

Straw yellow.
Nose
Delicately floral with notes of banana and citrusy grapefruit notes.
Stuffy
Savoury, mineral, crisp and fruity.

Excellent as an aperitif and paired with fish, molluscs and shellfish.
