The Collio Pinot Grigio DOC is the result of a precise selection of grapes in one of the most characteristic territories in the heart of the DOC area of ​​Collio. Thus, the characteristics of the soil and the specific climatic conditions ensure the highest and most typical expression of the aromas of the white grapes of the region.

Winemaking

First, the harvest of the grapes is done by hand in the first half of September. Then, the vinification is done without contact with the skin of the grapes after cold static decantation. In addition, the temperature is controlled at 16°C in stainless steel containers. Finally, and after all this process, the wine then undergoes aging: “surlie” (on the lees) for at least 3 months. Finally, aging in the bottle is done for a minimum of 2 months.

Dress

The robe of this Collio Pinot Grigio DOC is icy white. In addition, its color tends towards yellow as well as with light coppery stripes when ripe.
